
Last November we posted our review of Karen Knowler's Chocolate (Carob) Avocado Pudding recipe. This got to be one of our favorite recipes. We both love chocolate stuff, and this has been a staple for when we need something heavier and chocolate.
Thanks to Karen's generous offer to post some of her full recipes on our blog, we thought we'd start off with a chocolate-bang and post this fabulous recipe. Before we bought her book and discovered this recipe, we always made young coconut pudding, which while it is probably the most pudding-like and best tasting of all raw "puddings", this takes the cake for being quicker and easier to make. You know we like raw food that is really fast to make...
So, instead of blabbing on and on, here is the recipe!

Recipe Type: Dessert
Serving Size: Four Servings
Ingredients:
- 2 avocados
- ½ cup raw carob powder (or raw cocoa or raw chocolate powder)
- 1 cup dates (Medjools ideally)
Appliances needed: knife, High Speed Blender or hand blender
Approximate Time to Make: Less than 10 minutes
Directions:
- Simply blend all ingredients until the mixture is smooth and creamy and no lumps.
- Taste test before using. Add more avocado if you’d like it richer and/or creamier; add more dates for extra sweetness or add more carob for a stronger chocolate flavour.
- Serve on its own or with raw ice-cream for the ultimate treat.
Our Final Helpful Hints:
1. Although Karen doesn't mention it in the recipe, you are going to need some water to blend the ingredients. I figured she just didn't mention it in the ingredients, but I tried to blend it without water. The pudding didn't get very far, and it just made my blender cranky. So when making this recipe just add a bit of water to get the blender working, and add more as needed.
2. The best part about this pudding? It's so quick that you could make it in the morning and take it with you to work or school!
3. Lasts in the fridge for a few days!

Love this treat. I like to add a little bit of Almond Milk instead of water and Agave to substitute the dates. For a little kick add some chili. Yummy!
